When roasters compare green coffee suppliers, the first fork in the road is almost always the same question: Arabica or Robusta? The two species account for nearly all commercially traded coffee, but they differ dramatically in flavor, chemistry, and the growing conditions that produce them.

Arabica: Complexity at Altitude

Coffea arabica is grown at higher altitudes — typically 1,200 to 2,200 meters — where cooler temperatures slow cherry maturation and allow sugars and acids to develop more complexity. This is why origins like Yemen Haraz, Colombia Huila, and Ethiopian highlands consistently produce cups with bright acidity, floral aromatics, and layered fruit notes. Arabica contains roughly 1.2–1.5% caffeine and a lower chlorogenic acid content, which contributes to its comparatively smoother, sweeter profile.

Robusta: Body, Crema, and Resilience

Coffea canephora (Robusta) grows well at lower altitudes, resists disease more effectively, and yields more cherries per plant — making it more economical per kilogram. Its cup profile leans toward heavier body, low acidity, and earthy, sometimes woody notes, with almost double the caffeine content of Arabica. For espresso blends targeting a thick crema, or for markets that prioritize price stability over cup complexity, Robusta remains a strategic component.

What This Means for Sourcing

Most specialty roasters build their lineup around 100% washed or natural Arabica for single-origin offerings, while reserving Robusta — often a small percentage — for espresso blends that need extra body and crema stability. When you request a sample from a green coffee importer, always ask for the varietal, processing method, and altitude together; these three data points predict cup character far more reliably than species alone.
