Green coffee is remarkably stable compared to roasted coffee, but it is not indestructible. Poor storage can strip away the acidity, aromatics, and sweetness that made a lot worth buying in the first place. Here is what actually matters.
Moisture Content and Water Activity
Specialty green coffee should arrive with 10–12% moisture content and water activity below 0.70 aw. Above this threshold, beans become vulnerable to mold growth and staling. Below it, beans can become brittle and lose desirable flavor compounds. This is why we test both figures on every lot before shipment, not just moisture alone.
Packaging Makes the Difference
Standard jute or sisal bags are breathable, which is a liability in humid climates or long transit times — they let ambient moisture and oxygen degrade the coffee. Ideal Storage Conditions
- Temperature: Store between 15–25°C. Avoid areas near ovens, roasters, or direct sunlight.
- Relative humidity: Keep the storage room below 60% RH.
- Airflow: Stack bags on pallets, off the floor, with space for air circulation — never against exterior walls where condensation can form.
- Odor exposure: Green coffee absorbs ambient odors; never store it near chemicals, fuel, or strongly scented goods.
How Long Does Green Coffee Last?
Properly stored specialty green coffee holds peak quality for 12 to 24 months, though cupping character — particularly delicate florals and bright acidity — is best expressed within the first 6–12 months after harvest. This is one of green coffee’s biggest commercial advantages over roasted coffee: it gives your purchasing team real flexibility on timing and volume without sacrificing the cup.
A Note on FIFO
Always rotate stock on a first-in, first-out basis, and label every pallet with harvest date and lot number. Full traceability isn’t just a marketing claim — it is a warehouse discipline that protects the investment you made in sourcing quality coffee in the first place.
