Why Density Matters
High-altitude Arabica, like our Colombia Huila (density 728 g/L) or Yemen Haraz (density 737 g/L), grows slowly in cooler conditions, producing denser, harder beans. Dense beans require more sustained heat energy to roast evenly and are more forgiving of a slightly longer roast — but scorch easily if you rush the Maillard phase.
Lower-Density, Lower-Altitude Origins
Lots like Brazil Cerrado (density 710 g/L), grown at 900–1,300m, roast faster and are more prone to tipping or scorching if your charge temperature is too aggressive. These origins generally reward a gentler ramp rate and an earlier first crack.
A Practical Framework
- Dense, high-altitude washed coffees: Higher charge temperature, longer overall roast time, moderate development ratio (18–22%) to preserve bright acidity without underdeveloping the core.
- Natural-processed, fruit-forward lots: Slightly lower charge temperature to avoid scorching the sugar-rich exterior; watch for baking if the Maillard phase runs too long.
- Lower-density commercial-altitude lots: Faster roasts with careful heat management in the first few minutes to avoid tipping.
